Tonga Room has drawn cocktail lovers into San Francisco's Fairmont Hotel since 1945, outlasting every era that tried to leave tiki culture behind. Built around an indoor pool converted into a lagoon, it became the longest-running Polynesian bar in the city. Few cocktail bars anywhere can claim eight unbroken decades.
