Chi-Chi stood at the center of Palm Springs' midcentury Polynesian craze, opening in the 1950s as a playground for Hollywood's elite escaping to the desert. Tiki culture was more than kitsch back then. Postwar optimism poured into a rum glass, and few places captured that spirit like this legendary desert watering hole.
